- 2 large chicken breasts, diced
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 1 cup orzo pasta
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1/2 cup heavy cream
- Fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Season diced chicken with Cajun seasoning and set aside.
- Heat 1 tablespoon olive oil in a skillet over medium heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, add remaining olive oil and sauté garlic until fragrant. Add chopped bell peppers and cook until tender, about 3 minutes.
- Stir in orzo and cook for 1 minute. Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer until orzo is cooked and liquid is absorbed, about 10 minutes.
- Stir in heavy cream, cooked chicken, and season with salt and pepper. Cook for another 2 minutes until heated through.
- Garnish with chopped parsley and serve hot.
Notes
- Adjust Cajun seasoning to taste for more or less spice.
- For added color, include sliced green onions or a squeeze of lemon.
