A spicy and savory Cajun chicken orzo dish featuring tender grilled chicken pieces served over creamy orzo pasta with bell peppers and herbs.

Ingredients

  • 2 large chicken breasts, diced
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 cup orzo pasta
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • Fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Season diced chicken with Cajun seasoning and set aside.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add remaining olive oil and sauté garlic until fragrant. Add chopped bell peppers and cook until tender, about 3 minutes.
  4. Stir in orzo and cook for 1 minute. Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer until orzo is cooked and liquid is absorbed, about 10 minutes.
  5. Stir in heavy cream, cooked chicken, and season with salt and pepper. Cook for another 2 minutes until heated through.
  6. Garnish with chopped parsley and serve hot.

Notes

  • Adjust Cajun seasoning to taste for more or less spice.
  • For added color, include sliced green onions or a squeeze of lemon.
