- 1 lb baby potatoes, halved

- 1 tsp dried thyme or rosemary
- Fresh parsley for garnish
Instructions
- Add beef pieces and halved potatoes into the slow cooker.
- In a small bowl, mix melted butter, olive oil, garlic, salt, pepper, and herbs.
- Pour the garlic butter mixture over the beef and potatoes, tossing to coat evenly.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until beef is tender and potatoes are crispy.
- Garnish with chopped parsley before serving.

- For extra flavor, add a splash of balsamic vinegar or a sprinkle of Parmesan cheese before serving.
