- 1.5 pounds beef sirloin or stew meat, cut into bite-sized pieces
- 4 cloves garlic, minced
- 1/4 cup unsalted butter
- 1 pound small potatoes, halved or quartered
- 2 tablespoons olive oil

- 1 teaspoon paprika (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Toss potatoes with olive oil, salt, pepper, and paprika. Roast for 25-30 minutes until crispy.
- In a skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Place beef pieces in the slow cooker, pour garlic butter over the beef, and set to low for 6-8 hours or high for 3-4 hours until tender.
- Once beef is cooked, serve the beef bites alongside the crispy potatoes. Garnish with chopped parsley.
