Instructions
- In a medium bowl, combine shredded cooked chicken with mashed avocado, lime juice, salt, and pepper. Mix thoroughly until well combined.
- Spread the chicken and avocado mixture evenly over one slice of bread. Top with shredded cheese, red onions, and optional toppings like tomato slices or bacon.
- Cover with the second slice of bread.
- Heat a skillet or grill pan over medium heat. Place the assembled sandwich and cook for about 3-4 minutes on each side, until the bread is golden brown and cheese has melted.
