Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups vegetable or chicken broth
- 1 package (9 ounces) refrigerated tortellini
- Fresh basil leaves, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Saute chopped onion until translucent, about 5 minutes.
- Add minced garlic and cook for another minute.
- Pour in crushed tomatoes and broth. Bring to a boil.
- Reduce heat and simmer for 10 minutes.
- Add tortellini and cook according to package instructions, about 3-5 minutes.
- Season with salt, pepper, and fresh basil.
- Serve hot with extra basil garnish.
Notes
- You can add spinach or kale for extra greens.
- For a creamier texture, stir in a splash of heavy cream before serving.
