- 1.5 lbs beef stew meat
- 4 large potatoes, sliced
- 2 cups shredded cheddar cheese
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup beef broth
- 2 tbsp olive oil
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season beef with salt, pepper, and paprika. Heat olive oil in a skillet and brown the beef on all sides. Transfer to slow cooker.
- Add sliced potatoes, diced onion, minced garlic, and beef broth to the slow cooker.
- Cover and cook on low for 6-8 hours until beef is tender and potatoes are cooked through.
- Sprinkle shredded cheddar cheese over the casserole during the last 30 minutes of cooking.
- Serve hot, garnished with chopped parsley.

- For extra flavor, add sliced mushrooms or carrots during cooking.
- Can be assembled a day ahead for convenience.
