- 2 pounds beef stew meat, cubed
- 1 can (13.5 oz) coconut milk
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 2 carrots, sliced
- 1 cup green peas
- 1 red bell pepper, chopped
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Place beef stew meat in the slow cooker and season with salt and pepper.
- Add chopped onion, minced garlic, curry powder, turmeric, and cumin.
- Pour in the coconut milk and stir to combine.
- Add sliced carrots, chopped red bell pepper, and stir again.
- Cover and cook on low for 6–8 hours until the beef is tender.
- In the last 30 minutes, add green peas to the curry.
- Serve hot garnished with fresh cilantro and accompanied by steamed rice.
Notes
- Adjust spice levels by adding more curry powder for a spicier curry.
