- 1 lb ground turkey
- 2 large sweet potatoes, peeled and cubed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste

- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add diced onion and minced garlic, cook until translucent.
- Add ground turkey, cook until browned; season with salt, pepper, paprika, and thyme.
- Meanwhile, toss sweet potato cubes with remaining olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
- Combine cooked turkey mixture with roasted sweet potatoes in a baking dish. Mix gently to distribute evenly.
- Bake for an additional 15 minutes until bubbly and golden on top.
- Garnish with fresh parsley before serving.

- You can substitute ground chicken or beef for turkey.
