Instructions
- Heat a large skillet over medium heat and brush lightly with olive oil.
- Place one tortilla in the skillet and sprinkle evenly with cheese, pepperoni, and optional herbs.
- Cover with the second tortilla and press gently.
- Cook for 3-4 minutes until the bottom is golden brown.
- Carefully flip and cook the other side for another 3-4 minutes until crispy and cheese melts.
- Remove from skillet, slice into wedges, and serve hot with marinara sauce if desired.
