A quick and hearty chicken ramen stir fry that combines tender chicken slices, flavorful broth, and colorful vegetables, all tossed with soft ramen noodles for a satisfying meal.

  • 2 boneless chicken breasts, sliced
  • 200g ramen noodles
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 scallions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, grated
  • 1 teaspoon cornstarch (optional, for thickening)
  • Sesame seeds and fresh cilantro for garnish

Instructions

  1. Cook ramen noodles according to package instructions, drain and set aside.
  2. Heat sesame oil in a large skillet or wok over medium-high heat.
  3. Add sliced chicken and cook until browned and cooked through, about 5-7 minutes.
  4. Add garlic and ginger, sauté for 1 minute until fragrant.
  5. Stir in sliced peppers and cook for another 3-4 minutes until tender.
  6. Pour in soy sauce, and add cooked noodles to the skillet, tossing to combine all ingredients well.
