  • 2 boneless, skinless chicken breasts, thinly sliced or cubed
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream or half-and-half
  • 1 cup freshly grated Parmesan cheese
  • 1/2 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 1 tbsp chopped fresh parsley (optional for garnish)
  • Red pepper flakes (optional for a spicy kick)

Instructions

  1. Cook your chosen pasta according to the package instructions until al dente. Drain and set aside, reserving a cup of pasta water for later if needed.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced or cubed chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add minced garlic and cook for about 30 seconds until fragrant. Be careful not to burn the garlic!
  4. Pour in the heavy cream, stirring constantly. Bring to a gentle simmer, then add the grated Parmesan cheese. Continue stirring until the cheese melts and the sauce thickens. Season with salt, black pepper, and optional red pepper flakes.
  5. Return the cooked chicken to the skillet with the Parmesan sauce. Add the cooked pasta and toss to coat evenly. If the sauce is too thick, add a splash of reserved pasta water to reach your desired consistency.
