- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 2 chicken breasts, cooked and shredded
- 1 package (16 oz) gnocchi
- 2 cups fresh spinach, chopped
- 1 cup heavy cream
- 1/2 teaspoon thyme
- Salt and pepper to taste
- Grated Parmesan cheese for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrots, and celery until tender.
- Add chicken broth, bring to a boil, then add shredded chicken and gnocchi. Cook until gnocchi float to the top.
- Reduce heat, stir in heavy cream, thyme, salt, and pepper. Simmer for 5 minutes.
- Add chopped spinach and cook until wilted. Serve hot, garnished with Parmesan cheese.
Notes
- You can substitute leftover cooked chicken for convenience.
- Adjust the cream for a thinner or thicker soup as desired.
