  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 2 chicken breasts, cooked and shredded
  • 1 package (16 oz) gnocchi
  • 2 cups fresh spinach, chopped
  • 1 cup heavy cream
  • 1/2 teaspoon thyme
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrots, and celery until tender.
  2. Add chicken broth, bring to a boil, then add shredded chicken and gnocchi. Cook until gnocchi float to the top.
  3. Reduce heat, stir in heavy cream, thyme, salt, and pepper. Simmer for 5 minutes.
  4. Add chopped spinach and cook until wilted. Serve hot, garnished with Parmesan cheese.
