- 8 oz spiral pasta
- 2 cooked chicken breasts, sliced
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 cup black olives, pitted
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- For the dressing:
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook spiral pasta according to package instructions until al dente. Drain and rinse with cold water to cool.
- In a large bowl, combine cooked pasta, sliced chicken, cherry tomatoes, cucumber, olives, feta, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or refrigerate for up to 2 hours before serving.
Notes
- You can substitute grilled shrimp or tofu for chicken for different variations.
- Chill the salad before serving for a more refreshing taste.
