Instructions
- In a medium saucepan, combine lemon juice, lemon zest, sugar, and eggs. Cook over medium heat, stirring constantly, until thickened and reaching about 170°F. Remove from heat and stir in melted butter. Cool to room temperature.
- Mix graham cracker crumbs with melted butter and press into the bottom of a prepared pie dish or tart pan. Chill for 15-20 minutes.
- In a mixing bowl, beat heavy cream until soft peaks form. Gently fold in cooled lemon curd and vanilla extract if desired. Chill for at least 30 minutes.
- Spread lemon curd over chilled crust. Top with lemon mousse and smooth surface. Refrigerate for at least 2 hours until set.
- Garnish with fresh berries, mint leaves, or powdered sugar. Slice and serve chilled.
