Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté diced onion and garlic until translucent.
- Add carrots and celery, cook until slightly tender.
- Pour in chicken broth and bring to a simmer.
- Add shredded chicken, oregano, thyme, salt, and pepper.
- Simmer for 20 minutes to allow flavors to meld.
- Stir in lemon juice and zest.
- Serve hot garnished with fresh parsley.

- You can use store-bought cooked chicken or poach chicken breasts yourself.
