- 4 cups Rice Chex cereal
- 1 cup roasted peanuts or mixed nuts
- 1/2 cup unsalted butter
- 1 cup packed light brown sugar
- 1/4 cup light corn syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat oven to 250°F (120°C). Line a large baking sheet with parchment paper.
- In a saucepan, melt butter, brown sugar, and corn syrup over medium heat, stirring constantly until it reaches a boil. Let boil for 2 minutes.
- Remove from heat, stir in vanilla and baking soda until bubbly.
- Pour the caramel mixture over the cereal and nuts in a large bowl, tossing to coat evenly.
- Spread the mixture onto the prepared baking sheet in an even layer.
- Bake for 45 minutes, stirring every 15 minutes for even coating.
- Remove from oven and let cool completely. Optional: Melt chocolate chips and drizzle over the cooled mix.

- Store in an airtight container for up to a week.
- Add chocolate chips immediately after cooling for a richer flavor.
- Feel free to customize with your favorite nuts or pretzels.
