  • 1 cup roasted peanuts or mixed nuts
  • 1/2 cup unsalted butter
  • 1 cup packed light brown sugar
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat oven to 250°F (120°C). Line a large baking sheet with parchment paper.
  2. In a saucepan, melt butter, brown sugar, and corn syrup over medium heat, stirring constantly until it reaches a boil. Let boil for 2 minutes.
  3. Remove from heat, stir in vanilla and baking soda until bubbly.
  4. Pour the caramel mixture over the cereal and nuts in a large bowl, tossing to coat evenly.
  5. Spread the mixture onto the prepared baking sheet in an even layer.
  6. Bake for 45 minutes, stirring every 15 minutes for even coating.
