- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup enchilada sauce
- 8 small flour tortillas
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add diced onion and minced garlic, sauté until translucent.
- Add ground beef, chili powder, cumin, salt, and pepper. Cook until beef is browned and cooked through.
- Stir in enchilada sauce and simmer for 5 minutes.
- Spread a thin layer of sauce on the bottom of a baking dish.
- Place a tortilla, spoon some beef mixture onto it, roll up, and place seam down into the dish. Repeat with remaining tortillas.
- Pour remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
- Bake uncovered for 20-25 minutes until cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
Notes
- You can add chopped green chilies or jalapeños for extra spice.
- Use corn tortillas for a gluten-free version.
