A cheesy ground beef enchiladas recipe with seasoned ground beef rolled in tortillas, smothered in enchilada sauce and cheese, then baked to perfection.

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup enchilada sauce
  • 8 small flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add diced onion and minced garlic, sauté until translucent.
  3. Add ground beef, chili powder, cumin, salt, and pepper. Cook until beef is browned and cooked through.
  4. Stir in enchilada sauce and simmer for 5 minutes.
  5. Spread a thin layer of sauce on the bottom of a baking dish.
  6. Place a tortilla, spoon some beef mixture onto it, roll up, and place seam down into the dish. Repeat with remaining tortillas.
  7. Pour remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
  8. Bake uncovered for 20-25 minutes until cheese is melted and bubbly.
  9. Garnish with fresh cilantro before serving.

  • You can add chopped green chilies or jalapeños for extra spice.
