- 4 boneless chicken breasts
- 2 tablespoons olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 cup whiskey
- 1 cup heavy cream
- 2 tablespoons Dijon mustard
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper and cook until golden brown, about 6 minutes per side. Remove and set aside.
- In the same skillet, add chopped onion and cook until translucent. Add garlic and cook for another minute.
- Pour in whiskey, scraping any browned bits from the bottom. Let simmer for 5 minutes to reduce slightly.
- Add heavy cream and Dijon mustard, stirring constantly until the sauce thickens, about 3-4 minutes.
- Return chicken to the skillet, spoon sauce over, and cook until heated through. Garnish with chopped parsley before serving.
Notes
- For a richer flavor, use aged whiskey.
- Serve with mashed potatoes or crusty bread to soak up the sauce.
