- 4 Honey Garlic Sausage links (or your favorite sweet sausage)
- 3 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 tablespoons honey
- 1 teaspoon smoked paprika (optional)
- Salt and freshly ground black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Peel and cube the sweet potatoes. Slice the sausage into bite-sized pieces. Mince the garlic.
- Toss the sweet potato cubes with 1 tablespoon of olive oil, salt, pepper, and smoked paprika if using. Roast at 400°F (200°C) for 25-30 minutes until golden and tender.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the sausage slices until browned and crispy, about 5-7 minutes. Add minced garlic and cook for 30 seconds until fragrant.
- Lower the heat and drizzle honey over the sausage and garlic. Stir well and cook for 2-3 minutes.
- Add roasted sweet potatoes to the skillet, toss gently to combine, and heat through for a few minutes. Garnish with chopped parsley if desired.

- Ensure sweet potatoes are cut evenly for uniform roasting.
- Adjust sweetness with honey or maple syrup according to taste.
- Can substitute chicken sausage for pork sausage for a leaner option.
