  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 4 Honey Garlic Sausage links (or your favorite sweet sausage)
  • 3 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons honey
  • 1 teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Peel and cube the sweet potatoes. Slice the sausage into bite-sized pieces. Mince the garlic.
  2. Toss the sweet potato cubes with 1 tablespoon of olive oil, salt, pepper, and smoked paprika if using. Roast at 400°F (200°C) for 25-30 minutes until golden and tender.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the sausage slices until browned and crispy, about 5-7 minutes. Add minced garlic and cook for 30 seconds until fragrant.
  4. Lower the heat and drizzle honey over the sausage and garlic. Stir well and cook for 2-3 minutes.
  5. Add roasted sweet potatoes to the skillet, toss gently to combine, and heat through for a few minutes. Garnish with chopped parsley if desired.

Notes

  • Ensure sweet potatoes are cut evenly for uniform roasting.
  • Adjust sweetness with honey or maple syrup according to taste.
  • Can substitute chicken sausage for pork sausage for a leaner option.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated in the microwave or skillet.
