- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups ripe tomatoes, chopped

Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook until translucent, about 5 minutes.
- Stir in minced garlic and cook for another minute.
- Add chopped tomatoes, vegetable broth, sugar, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Use an immersion blender or transfer to a blender to puree the soup until smooth.
- Adjust seasoning as needed and garnish with fresh basil before serving.
Notes
- You can add a splash of cream for a creamier texture.
- For a smoky flavor, roast the tomatoes before adding.
