For the crumb topping:
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan or cake pan with butter and dust with flour.
- In a large bowl, mash the bananas until smooth. Add eggs, vanilla, and melted butter; whisk until combined. Mix in baking soda and salt. Gradually fold in flour until just combined.
- In a separate bowl, combine flour, brown sugar, and cinnamon. Cut in cold butter until the mixture resembles coarse crumbs.
- Pour the banana batter into the prepared pan and spread evenly. Sprinkle the crumb mixture over the top generously.
- Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean. Let cool slightly before slicing and serving.

- Chill the crumb topping before sprinkling to keep it crispy.
- Avoid overmixing the batter to maintain a tender crumb.
