- 2 pounds beef sirloin or tenderloin, cut into bite-sized pieces
- 4 cloves garlic, minced
- 1/4 cup unsalted butter
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme or rosemary (optional)
- Chopped parsley for garnish
Instructions
- Heat olive oil in a skillet over medium-high heat. Sear beef bites until browned on all sides, then transfer to slow cooker.
- In the same skillet, melt butter and cook garlic until fragrant, about 1 minute. Pour over beef in slow cooker.
- Season with salt, pepper, and herbs if using. Cover and cook on low for 4-6 hours until tender.
- Serve hot, garnished with chopped parsley.
