Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Beat eggs and granulated sugar until thick and pale. Gently fold in flour.
- Spread batter evenly onto the prepared sheet and bake for 12-15 minutes.
- While still warm, invert cake onto a clean towel dusted with powdered sugar and roll gently to shape. Let cool.
- Mix softened cream cheese, powdered sugar, and vanilla until smooth. Spread over the cooled cake.
- Arrange fresh cherries over the cream cheese layer, then reroll the cake gently.
- Dust with additional powdered sugar before serving.
