- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into chunks
- 3 carrots, sliced
- 2 potatoes, diced
- 1 cup green beans, trimmed
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat. Sear chicken chunks until browned, then transfer to the slow cooker.
- Add chopped onions and garlic to the skillet; cook until fragrant. Pour into the slow cooker.
- Add carrots, potatoes, herbs, salt, and pepper to the slow cooker along with chicken broth.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until vegetables are tender and chicken is cooked through.
- Add green beans in the last 30 minutes of cooking. Serve hot garnished with fresh herbs.
Notes
- Adjust seasoning to taste. You can add a splash of cream for extra richness.
- Serve with crusty bread for a complete meal.
