  • 1 lb Italian sausage, casings removed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 package (9 oz) refrigerated tortellini
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, cook sausage over medium heat until browned, about 5-7 minutes. Remove and set aside.
  2. In the same pot, add diced onion and cook until translucent, about 3 minutes. Add garlic and cook for 1 minute.
  3. Pour in chicken broth, add Italian seasoning, salt, and pepper. Bring to a boil.
  4. Add cooked sausage, diced tomatoes, and tortellini. Reduce heat and simmer for 10 minutes, until tortellini is tender.
  5. Serve hot, garnished with chopped parsley.
