- 1 lb Italian sausage, casings removed
- 1 small onion, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 package (9 oz) refrigerated tortellini
- 1 can (14.5 oz) diced tomatoes, drained
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, cook sausage over medium heat until browned, about 5-7 minutes. Remove and set aside.
- In the same pot, add diced onion and cook until translucent, about 3 minutes. Add garlic and cook for 1 minute.
- Pour in chicken broth, add Italian seasoning, salt, and pepper. Bring to a boil.
- Add cooked sausage, diced tomatoes, and tortellini. Reduce heat and simmer for 10 minutes, until tortellini is tender.
- Serve hot, garnished with chopped parsley.
Notes
- You can substitute hot sausage for a spicy kick.
- For a lighter version, use turkey sausage and low-sodium broth.
