- 1 pound ground beef
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 cups beef or chicken broth
- 1 can (14.5 oz) crushed tomatoes
- 8 no-boil lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
- Add chopped onion and minced garlic; sauté until fragrant and translucent.
- Pour in broth and crushed tomatoes; bring to a boil.
- Add broken lasagna noodles and Italian seasoning. Reduce heat and simmer until noodles are tender, about 15 minutes.
- Stir in ricotta cheese until well combined. Season with salt and pepper.
- Ladle soup into bowls, sprinkling mozzarella and Parmesan cheeses on top. Serve hot garnished with fresh basil if desired.
