- 1 pound Italian sausage, sliced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 package (9 oz) refrigerated tortellini
- 2 cups fresh spinach, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for garnish
Instructions
- In a skillet, brown the sausage slices until cooked through. Transfer to crockpot.
- Add diced tomatoes, chicken broth, Italian seasoning, salt, and pepper to the crockpot. Stir well.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours.
- Add tortellini and spinach in the last 30 minutes of cooking. Stir and cook until pasta is tender and spinach is wilted.
- Serve hot, garnished with grated Parmesan cheese.

- You can substitute with turkey or chicken sausage for a leaner option.
- For a creamier version, stir in a splash of heavy cream before serving.
