  • 1 pound ground beef or Italian sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef or chicken broth
  • 8 ounces lasagna noodles, broken
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

  1. Heat a skillet over medium-high heat and cook the ground beef or sausage until browned. Drain excess fat and transfer to slow cooker.
  2. Add chopped onion and minced garlic to the slow cooker with the meat. Stir in crushed tomatoes, broth, Italian seasoning, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. During the last 30 minutes of cooking, add broken lasagna noodles to the soup. Cover and continue cooking.
  5. Once noodles are tender, stir in shredded mozzarella and grated Parmesan cheeses. Garnish with fresh basil or parsley before serving.
