- 1 pound ground beef or Italian sausage
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups beef or chicken broth
- 8 ounces lasagna noodles, broken
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil or parsley for garnish
Instructions
- Heat a skillet over medium-high heat and cook the ground beef or sausage until browned. Drain excess fat and transfer to slow cooker.
- Add chopped onion and minced garlic to the slow cooker with the meat. Stir in crushed tomatoes, broth, Italian seasoning, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- During the last 30 minutes of cooking, add broken lasagna noodles to the soup. Cover and continue cooking.
- Once noodles are tender, stir in shredded mozzarella and grated Parmesan cheeses. Garnish with fresh basil or parsley before serving.
