- 1 lb cooked shredded chicken
- 4 cups sweet corn kernels
- 2 cups potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup milk or heavy cream
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Add shredded chicken, corn, diced potatoes, onion, garlic, and chicken broth to the crockpot.
- Cook on low for 6 hours or high for 3 hours until potatoes are tender.
- Stir in milk or heavy cream, butter, salt, and pepper. Cook for an additional 30 minutes.
- Serve hot garnished with fresh parsley.
Notes
- You can substitute fresh corn with frozen corn.
- Adjust the cream for desired thickness.
- For a smoky flavor, add a pinch of smoked paprika.
