- 1 pound ground beef or diced beef stew meat
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups potatoes, diced
- 1 cup corn kernels
- 1 red bell pepper, chopped

- 2 tablespoons tomato paste

Instructions
- In a large pot, cook ground beef or diced beef until browned. Remove excess fat if needed.
- Add chopped onion and minced garlic; cook until fragrant and translucent.
- Stir in potatoes, corn, red bell pepper, smoked paprika, salt, and pepper.
- Pour in beef broth and bring to a boil. Reduce heat and simmer until vegetables are tender, about 20 minutes.
- Stir in heavy cream and tomato paste; cook for an additional 5 minutes until heated through.
- Serve hot, garnished with chopped green onions and shredded cheese.
