- 20 jumbo shells
- 2 cups ricotta cheese
- 1 cup cooked chopped spinach
- 1/2 cup grated Parmesan cheese
- 1 egg
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Cook pasta shells in boiling salted water until al dente, then drain and set aside.
- In a bowl, combine ricotta, cooked spinach, Parmesan, egg, salt, and pepper. Mix well.
- Stuff each shell with the ricotta mixture and place in a baking dish.
- Pour marinara sauce over the shells and top with mozzarella cheese.
- Drizzle with olive oil and bake uncovered for 25-30 minutes until bubbly and golden.
Notes
- You can add sautéed garlic or a pinch of nutmeg to the filling for extra flavor.
- For a vegetarian variation, skip the cheese and add chopped vegetables like mushrooms or zucchini.
