- 20 large pasta shells
- 2 cups ricotta cheese
- 1 cup chopped fresh spinach
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Cook pasta shells in boiling salted water until al dente, drain and set aside.
- In a bowl, mix ricotta, chopped spinach, garlic, salt, and pepper.
- Preheat oven to 375°F (190°C). Spread a thin layer of marinara sauce in a baking dish.
- Stuff each shell with the spinach ricotta mixture and place in the dish.
- Top with shredded mozzarella and Parmesan cheese.
- Bake for 20-25 minutes until cheese is bubbly and golden.
Notes
- You can substitute spinach with kale or arugula for variation.
- Use whole wheat pasta for added fiber.
- Serve with a side salad for a complete meal.
