Instructions

  3. In a mixing bowl, combine the sweet potato flesh, cranberries, sliced apples, honey, and cinnamon. Mix well.
  4. Spoon the mixture back into the sweet potato shells. Top with chopped nuts if desired.
  5. Return to the oven and bake for an additional 15 minutes. Garnish with fresh mint before serving.
