- 4 medium sweet potatoes
- 1 cup fresh cranberries
- 2 large apples, sliced
- 2 tablespoons honey (optional)
- 1 teaspoon cinnamon
- 1/4 cup chopped nuts (optional)
- Fresh mint for garnish
Instructions
- Preheat oven to 400°F (200°C). Pierce sweet potatoes several times and bake for 45-60 minutes until soft.
- Let the sweet potatoes cool slightly, then halve and scoop out most of the flesh into a bowl, leaving a small border inside.
- In a mixing bowl, combine the sweet potato flesh, cranberries, sliced apples, honey, and cinnamon. Mix well.
- Spoon the mixture back into the sweet potato shells. Top with chopped nuts if desired.
- Return to the oven and bake for an additional 15 minutes. Garnish with fresh mint before serving.

- For added sweetness, drizzle with honey or maple syrup before baking.
