- 1 lb (450g) boneless chicken breasts, diced
- 4 cups (960ml) chicken broth
- 1 tablespoon turmeric powder
- 1 teaspoon ground ginger
- 1 garlic clove, minced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 cup spinach leaves
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until translucent.
- Add carrots, celery, turmeric, and ginger; cook for 3 minutes.
- Pour in chicken broth and bring to a boil.
- Add diced chicken and simmer for 20 minutes until cooked through.
- Stir in spinach and cook for 2 more minutes.
- Season with salt and pepper. Serve hot garnished with herbs if desired.

- You can add other vegetables like zucchini or kale for variation.
- Use freshly grated turmeric for a stronger flavor.
