  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 500g boneless chicken breasts or thighs, cut into bite-sized pieces
  • 200ml plain yogurt
  • 2 tablespoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 tablespoons olive oil or vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 400g chopped tomatoes (canned or fresh)
  • 200ml heavy cream or coconut cream for extra creaminess
  • Salt and black pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Start by creating a flavorful marinade for the chicken. In a bowl, combine the plain yogurt, garam masala, turmeric, ground cumin, paprika, salt, and pepper. Add the chicken pieces to the marinade, ensuring they are thoroughly coated. Cover and refrigerate for at least 30 minutes, or preferably overnight.
  2. Preheat your grill or oven to 200°C (390°F). Thread the marinated chicken onto skewers or arrange on a baking sheet. Cook for approximately 15-20 minutes or until the chicken is cooked through and slightly charred. Alternatively, cook in a hot skillet with a little oil for a smoky flavor.
  3. While the chicken is cooking, heat oil in a large pan over medium heat. Add the chopped onions and sauté until translucent. Add minced garlic and grated ginger, cooking for about a minute. Stir in chopped tomatoes, salt, and spices. Let simmer until the mixture thickens and becomes aromatic.
  4. Add the cooked chicken to the sauce and stir well. Pour in the heavy cream or coconut cream and simmer for an additional 10 minutes. Garnish with fresh cilantro before serving.

Notes

  • Marinate the chicken overnight for deeper flavor.
  • Use fresh spices to enhance aroma and taste.
  • Adjust spice levels by increasing or decreasing chili powder.
  • Simmer gently to develop a rich, flavorful sauce.
