  • 2 lb steak (sirloin or ribeye), sliced
  • 4 large potatoes, cut into wedges
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme or rosemary
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Toss potatoes with 1 tbsp olive oil, salt, pepper, and herbs. Roast on a baking sheet for 25-30 minutes until crispy.
  2. Meanwhile, season steak slices with salt and pepper.
  3. Heat 2 tbsp butter in a large skillet over medium-high heat. Add steak slices and sear for 2-3 minutes per side until cooked to desired doneness. Remove and set aside.
  4. In the same skillet, add remaining butter and minced garlic. Cook for 1 minute until fragrant.
  5. Add steak back to the skillet, spooning garlic butter over the slices. Serve hot alongside the roasted potatoes, garnished with fresh parsley.
