- 8 oz spaghetti or your favorite pasta
- 2 cups fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 cup grated Parmesan cheese (optional)
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add cherry tomatoes and cook for 2-3 minutes until softened.
- Stir in chopped spinach and cook until wilted, about 1-2 minutes.
- Combine the cooked pasta with the skillet mixture, toss to coat evenly.
- Season with salt and pepper, sprinkle with Parmesan cheese and fresh herbs if desired. Serve warm.
Notes
- You can add crushed red pepper flakes for a spicy kick.
- For vegan version, omit Parmesan cheese or replace with nutritional yeast.
- Use whole wheat or gluten-free pasta for dietary preferences.
