- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1/2 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs, beaten
- Oil for frying
- 1/4 cup mayonnaise
- 2 tablespoons sriracha or buffalo sauce
- 2 tablespoons honey or sugar
- 1 cup cooked rice
- Chopped green onions and sesame seeds for garnish
Instructions
- Mix flour, cornstarch, salt, and pepper in a bowl. Dip chicken pieces in beaten eggs, then coat with the flour mixture.
- Heat oil in a deep skillet or wok over medium heat. Fry chicken until golden brown and cooked through, about 4-5 minutes. Drain on paper towels.
- In a small bowl, combine mayonnaise, sriracha, and honey to make the sauce.
- Toss the fried chicken with the spicy sauce until well coated.
- Serve over cooked rice, garnished with chopped green onions and sesame seeds.
Notes
- You can bake the chicken for a healthier version by baking at 400°F for 20 minutes.
- Adjust spice levels by adding more or less sriracha.
- Use jasmine or basmati rice for a more fragrant base.
