- 1 pound cooked turkey, crumbled
- 1 cup dried cranberries
- 2 cups stuffing mix (prepared or dry)
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 eggs, beaten
- Oil for frying
Instructions
- In a large mixing bowl, combine cooked turkey, cranberries, stuffing mix, Parmesan, parsley, salt, and pepper.
- Add beaten eggs and mix until well combined.
- Form mixture into small balls, about 1 inch in diameter.
- Heat oil in a deep skillet over medium-high heat.
- Fry stuffing balls in batches until golden brown and cooked through, about 4-5 minutes.
- Drain on paper towels and serve warm garnished with extra parsley.
Notes
- You can prepare these balls ahead and refrigerate before frying for easier serving.
- For a healthier option, bake the balls at 375°F for 20 minutes instead of frying.
