Instructions
- Preheat your oven to 400°F (200°C). Roast the red peppers until blackened, about 20 minutes. Peel and blend into a smooth sauce.
- Season the tilapia fillets with salt and pepper.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the tilapia for 3-4 minutes per side until golden and cooked through.
- Pour the roasted pepper sauce over the cooked tilapia or serve on the side.
- Garnish with chopped parsley and serve hot.

- For a smokier flavor, char the peppers directly on a gas flame if available.
