- 3 bell peppers (red, yellow, green), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat and brown sausage links on all sides. Transfer to the slow cooker.
- Add sliced peppers, onion, garlic, Italian herbs, salt, and pepper to the slow cooker.
- Cook on low for 6-8 hours or on high for 3-4 hours until flavors meld and sausages are cooked through.
- Garnish with fresh parsley before serving. Serve hot with crusty bread or over rice.
Notes
For added spice, include sliced jalapenos or red pepper flakes. Use chicken or vegetarian sausages for a healthier or meatless variation.
