- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or non-stick spray and lightly dust with flour or line it with parchment paper for easy removal.
- In a large mixing bowl, whisk together the yogurt, sugar, eggs, lemon juice, and lemon zest until smooth and well combined.
- In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients into the wet mixture, stirring until just combined.
- Gently fold in the fresh blueberries, being careful not to crush them.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and serve topped with extra blueberries or powdered sugar if desired.
