Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or non-stick spray and lightly dust with flour or line it with parchment paper for easy removal.
  2. In a large mixing bowl, whisk together the yogurt, sugar, eggs, lemon juice, and lemon zest until smooth and well combined.
  3. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients into the wet mixture, stirring until just combined.
  4. Gently fold in the fresh blueberries, being careful not to crush them.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
