- 1.5 lbs (700g) boneless chicken breasts or thighs, cut into cubes
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 2 teaspoons garam masala
- 1 teaspoon turmeric
- 1 teaspoon ground cumin
- 1 teaspoon chili powder (adjust to taste)
- 4 tablespoons unsalted butter
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1-inch piece fresh ginger, grated
- 1 cup tomato puree
- 1/2 cup heavy cream
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Combine yogurt, lemon juice, garam masala, turmeric, cumin, chili powder, and salt in a bowl. Add the chicken pieces and coat well. Cover and marinate in the refrigerator for at least 1 hour, or preferably overnight for maximum flavor.
- Heat a skillet over medium heat and add a tablespoon of butter. Remove chicken from marinade (drain excess) and cook until golden brown and cooked through, about 7-10 minutes. Remove and set aside.
- In the same skillet, add the remaining butter and sauté the chopped onion until translucent. Add minced garlic and grated ginger, cooking for another minute. Stir in tomato puree and cook for 10 minutes until thickened.
- Add the cooked chicken back into the sauce. Pour in the heavy cream and stir well. Simmer for an additional 10 minutes to allow flavors to meld and sauce to thicken slightly. Season with salt as needed.

- Adjust spice levels according to your preference, adding more chili powder for heat or milder spices for a milder dish.
