Instructions
- Preheat oven to 375°F (190°C).
- Cook the ground beef in a skillet over medium heat until browned; drain excess fat.
- Add chopped onions and bell peppers; cook until tender.
- Stir in tomato soup, mixed vegetables, cooked rice, salt, and pepper; mix well.
- Transfer to a greased baking dish and top with shredded cheddar cheese.
- Bake for 25-30 minutes until cheese is bubbly and golden.
