- 1 pound (450g) chicken breasts, cut into bite-sized pieces
- 1 package (9 oz) cheese tortellini
- 4 cups (960ml) chicken broth
- 1 cup (240ml) heavy cream
- 1 cup (100g) grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Place chicken pieces in the crockpot, season with salt, pepper, and Italian seasoning.
- Add chicken broth and garlic. Cover and cook on low for 4 hours.
- Stir in heavy cream and Parmesan cheese. Add tortellini and cook an additional 20 minutes until tender.
- Garnish with fresh basil or parsley before serving.
Notes
- You can substitute heavy cream with half-and-half for a lighter dish.
- Adjust seasoning and cheese amount to taste.
- For a veggie boost, add spinach or cherry tomatoes during last 10 minutes.
