- 1 unbaked pie crust
- 4 large eggs
- 1 cup shredded cheese (cheddar or Swiss)
- 1/2 cup milk or cream
- 1 cup fresh spinach, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon chopped fresh herbs (optional)
Instructions
- Preheat oven to 375°F (190°C). Fit the pie crust into a 9-inch pie dish.
- In a mixing bowl, whisk together eggs, milk, salt, pepper, and herbs.
- Spread chopped spinach and cherry tomatoes evenly over the crust.
- Pour the egg mixture over the vegetables and sprinkle with cheese.
- Bake for 35-40 minutes until the filling is set and the crust is golden brown.
- Allow to cool slightly before slicing and serving.
Notes
For additional flavor, add cooked bacon or sautéed onions. Can be made ahead and reheated. Suitable for breakfast and brunch menus.
