- 8 oz angel hair pasta
- 1 lb large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- Juice of half a lemon
- Fresh parsley, chopped for garnish
Instructions
- Cook the angel hair pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat 1 tablespoon olive oil over medium heat. Add shrimp, season with salt and pepper, and cook until pink and cooked through, about 2-3 minutes per side. Remove and set aside.
- In the same skillet, add remaining olive oil, garlic, and asparagus. Sauté for about 4-5 minutes until asparagus is tender-crisp.
- Add cooked pasta and shrimp back into the skillet. Toss everything together, add lemon juice, and cook for an additional minute to combine flavors.
- Garnish with chopped parsley and serve warm.
Notes
- Ensure not to overcook the shrimp to keep them tender.
- You can add red pepper flakes for a spicy kick.
- For a richer flavor, sprinkle some grated Parmesan cheese before serving.
