  • 8 oz angel hair pasta
  • 1 lb large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Juice of half a lemon
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook the angel hair pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat 1 tablespoon olive oil over medium heat. Add shrimp, season with salt and pepper, and cook until pink and cooked through, about 2-3 minutes per side. Remove and set aside.
  3. In the same skillet, add remaining olive oil, garlic, and asparagus. Sauté for about 4-5 minutes until asparagus is tender-crisp.
  4. Add cooked pasta and shrimp back into the skillet. Toss everything together, add lemon juice, and cook for an additional minute to combine flavors.
  5. Garnish with chopped parsley and serve warm.
