- 1 cup graham cracker crumbs
- 3 tablespoons sugar
- 4 tablespoons unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- assorted toppings: berries, fruit compote, caramel sauce
Instructions
- Preheat oven to 325°F (160°C) and prepare a muffin tin with paper liners.
- Mix graham cracker crumbs, sugar, and melted butter until combined. Press evenly into the bottoms of liners.
- In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream, mixing well.
- Divide the filling evenly over the crusts.
- Bake for 20-25 minutes until set. Cool completely.
- Top with fresh berries or other desired toppings before serving.
Notes
- Chill the cheesecakes in the refrigerator for at least 2 hours before serving for best texture.
- You can prepare these a day in advance.
