- 8 oz spiral pasta
- 1 cup cherry tomatoes, halved
- 1 zucchini, sliced
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- 4 oz feta cheese
- 2 tbsp olive oil
- Fresh basil leaves
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Place feta cheese on a baking sheet and bake for 15 minutes until golden.
- Cook pasta according to package instructions, drain and set aside.
- In a skillet, heat olive oil and sauté garlic, cherry tomatoes, zucchini, and bell pepper until tender.
- Mix the cooked pasta with the sautéed vegetables. Crumble baked feta over the top.
- Garnish with fresh basil leaves and serve hot.
Notes
- You can substitute the vegetables with your favorites like spinach or mushrooms.
- For a vegan version, use vegan feta or omit the cheese.
- Ensure feta is baked until it’s golden for the best flavor.
