  • 8 oz (225 g) pasta (penne or spaghetti)
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach, chopped
  • 1 block (200 g) feta cheese
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Place feta block in a small baking dish, drizzle with 1 tbsp olive oil, and bake for 20 minutes until golden.
  2. Cook pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat remaining olive oil over medium heat. Add garlic and cook until fragrant, about 1 minute.
  4. Add cherry tomatoes and cook until softened, about 5 minutes.
  5. Stir in chopped spinach, cook until wilted, then combine with cooked pasta.
  6. Crumble the baked feta over the pasta mixture, toss gently to combine.
  7. Season with oregano, salt, and pepper. Garnish with fresh basil before serving.
