- 8 oz (225 g) pasta (penne or spaghetti)
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach, chopped
- 1 block (200 g) feta cheese
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat oven to 400°F (200°C). Place feta block in a small baking dish, drizzle with 1 tbsp olive oil, and bake for 20 minutes until golden.
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat remaining olive oil over medium heat. Add garlic and cook until fragrant, about 1 minute.
- Add cherry tomatoes and cook until softened, about 5 minutes.
- Stir in chopped spinach, cook until wilted, then combine with cooked pasta.
- Crumble the baked feta over the pasta mixture, toss gently to combine.
- Season with oregano, salt, and pepper. Garnish with fresh basil before serving.
Notes
- You can substitute feta with goat cheese for a different flavor.
- Roasting the feta enhances its flavor and creates a creamy sauce.
